Pumpkin Cookies -The best ever, promise!

There are many things I enjoy in life, and homemade cookies are one of them. Then again, I'm good with just about ANY food that uses butter, sugar, flour, cinnamon, and chocolate chips. I'm not sure why Dalton is so picky about his choice of cookie, but he turns his nose up to chocolate chip cookies, sugar cookies, and just about any other kind of homemade cookie. He has a passion for my pumpkin cookies though. I have tried to tell him that pumpkin cookies are really a "seasonal" type treat, he enjoys them no matter what time of year it is. Pumpkin cookies are the ONLY homemade cookies. So, in honor of the leaves beginning to change, crisp evening air, and honey crip apples abundantly available (my favorite kind of apples), here is my recipe for pumpkin cookies. If you would like chocolate chips, I recommend the mini's. I don't know what it is about mini chips, but I like them -A LOT! You may want to think about doubling this recipe or you may not get any! Dalton will be my helper in the kitchen this time: Ingredients: 1/4 lb butter 1 cup brown sugar 1/4 cup white sugar 2 eggs 1 cup mashed, cooked pumpkin (1 tsp. lemon extract!!) Don't forget this step! Sift together in a seperate bowl (if you are a sifter): 2 cups flour 2 tsp. cinnamon 1/2 tsp. of each (salt, cloves, nutmeg, ginger) 1 tsp. soda Directions: Cream together butter, sugar, eggs & pumpkin. Then, add only dry ingredients. Blend in extract, then if desired, MINI Chocolate chips (and you should desire). Drop by spoonfuls onto a greased cookie sheet. Bake @ 400 for 10-12 minutes. Isn't he so stink'n cute when he wants to be: Cream together butter, sugar, eggs & pumpkin: Yes, I still use the old kind of mixer -no Kitchen Aid here (SOMEDAY!) Then add your dry ingredients and mix till blended: Oh, don't look! What horrible manners he has. (I was licking the other one) This is what the batter should look like(only if you doubled it, otherwise you will only have half this much): Now, if you forget this little step, your effort will be for naught. Don't forget this!! I've done it, and my pumpkin cookies didn't taste right. Just stir in the extract, no need to mix: Another important step -MINI CHIPS!! Only use MINI CHIPS!! Lots of MINI CHIPS! I can't tell you how many because I just have them in a large container that I grab from. So LOTS of MINI CHIPS. Place by the spoonful on a cookie sheet in a pre-heated oven: Bet you can't eat just one! MMMMMMMM: I'll also bet you will need some of this to go with it:

I know these cookies are good! I made a pumpkin bread recipe this weekend as well for the RS broadcast. It was heavenly!
